Raspberry Mousse

For a light and fluffy treat that’s full of raspberry tang, try this one-of-a-kind mousse.

Ingredients:

  • 2 cups fresh raspberries
  • 1/2 cup sugar
  • 1 tbsp lemon juice
  • 1-1/2 tsp unflavored gelatin
  • 1/4 cup cold water  
  • 1 cup heavy whipping cream

Instructions:

  1. Place the raspberries in a food processor and pulse to puree. Strain and discard seeds using a sieve.
  2. Place puree in a bowl. Stir in sugar and lemon juice. Set aside.
  3. In a small saucepan, sprinkle gelatin over cold water and let stand for 1 minute. Stir over low heat until gelatin is completely dissolved.
  4. Stir gelatin mixture into the raspberry mixture. Refrigerate for about 1 hour, until slightly thickened.
  5. Transfer to a mixing bowl and beat on high speed with a mixer, until foamy. Gradually add cream and beat until thickened (about 2 minutes).
  6. Spoon into dessert dishes. Cover and refrigerate for 1-2 hours or until set. Top with whipped cream and enjoy!
